Butterfly pea flowers, also called Asian pigeonwings, are flowers native to Thailand that, once soaked in water, make a strikingly deep blue herbal infusion that turns deep purple once an acid component, like lemon or lime juice, is added. The taste of the infusion is very flowery and delicate, can be enjoyed both hot and cold, and it’ also completely caffeine free, so it’s suitable for all ages. Other than on it’s own, the herbal infusion can be used as a base for mocktails and cocktails. The flowers can also be used as a natural dye, for example by adding them to rice or milk to color them blue. Naturally vegan and gluten-free.
Steep 5 or 6 dried butterfly pea flowers per each 8 oz of boiling water for up to 3 minutes.
