Coriander is one of the world oldest spices, and its use can be traced back to many ancient societies around the world. It is highly aromatic, with earthy and herbaceous flavor notes and hints of citrus peel and sage. Very versatile, this spice is widely used (as a whole seed or ground) in a lot of traditional Eastern, Southern Mediterranean, and Latin-American dishes. It is a fundamental ingredient for curries, and also great for potato salads, beans soups, rice, and vegetable dishes; it is often paired with cumin, and in general makes a great ingredient in spice rubs, adding a bright flavor. In the US is also used to flavor breads, sausages, corned beef, stews and soups. The whole seed is part of many pickling spice mixes, and the ground seed can also be used to introduce an herbal note to desserts, especially sorbets and ice-creams.
