Fennel seed has a slight licorice flavor, and is a very popular spice in Italian cuisine, as well as being an essential ingredient in some masalas and other South Asian dishes. Its woodsy, sharp flavor is very good as a topping for breads, especially dark breads, and salads, or to add an Italian flavor to ground meat, sausages, sauces and stuffing.
