The raw seed can be quite bitter, but the flavor mellows out nicely once fenugreek is toasted or sauteed in clarified butter or oil. We recommend to start by adding a small quantity of fenugreek (1/4 tsp) to any new recipe you are trying out and then add more after tasting, if desired, because its potency might overcome other, more delicate, spices. A fundamental ingredient in many curry powders, fenugreek also pairs very well with lentils and root vegetables, and is excellent for balancing sweet or rich recipes, such as for example coconut-milk based curries.
