Roasted Persian lime powder is a traditional Middle Eastern ingredient, used to flavor soups, stews, or as a dry rub. Limes are boiled briefly in a salty brine, then dried, milled, and roasted. The flavor is intensely citrusy, with earthy notes due to the roasting, and will brighten up any dish. Yotam Ottolenghi, one of our favorite chefs and author of several bestselling cookbooks, swears by roasted limes, and after trying them, we swear it too: try it once, and you’ll never want to go without again! Traditionally paired with lamb, lentils, and beans, we also like it a lot on chicken and fish stews. Also great when sparingly rubbed on a well-marbled steak or a fatty pork chop before the meat goes onto the grill and when added to the cooking liquid for basmati rice, as is sometimes done in Northern India; use one-half teaspoon or so per cup of dry rice. Naturally vegan and gluten-free.
